Lemon/Orange Mini Cupcakes

These mini cupcakes are a refreshing snack for work, parties, or any occasion.  They have a wonderful lemony taste in the cupcake, and the icing has a luscious orange taste that melts in your mouth.  The two together equals delicious!  The recipe can be found at the site below (thanks Paula Deen-love you!) but instead of using lemon juice in the icing I used ½ cup frozen orange juice thawed. 

I think the icing was the best part.  This was one icing I kept eating and eating from the bowl - and I haven’t done that in awhile!!

Things going on around my back yard…

So I saw this bird hanging around my back porch.  I could tell he was up to something.  I would try shooing him away, but I was not successful.  The bird eventually won!

One morning I saw him....  on top of my ceiling fan on the back porch.  Seems innocent enough, right?  Well.. hang on to your hats!  It didn't take long before he/she had a full-blown bird's nest.  And who can get rid of a birds nest once it starts laying eggs? 

So give it a little time, and here are the results.  Though they have completely messed up my ceiling fan, I have to admit it has been fun looking out the back widow watching the mother bring food to her babies.  The babies impatiently wait for the mother to make trips from wherever she goes, back to the nest to feed them.  It seemed that before I knew it, the baby birds were completely grown and flying on their own.     

I see this red bird every once in awhile in the back yard.  I wish it would stay around longer.  I just love it! 

All in all, it's been a fun summer watching Mother Nature's wonders in my own back yard.  Next I'm hoping to get a humming bird feeder to hang.  I would love to see some humming birds!  Happy bird watching!!!
