Quick & Easy Minestrone Soup
We all like simple things, don't we? It's good because we don't have to think as much! I don't know about you, but my work days are filled with busy work and a lot of thinking... analytical, multi-tasking, planning. Definitely on brain overload! It's nice to do something simple when I get home. This
is a really simple minestrone soup using can soup and adding a few more ingredients to expand
the flavors. I make this soup in the winter when I need something warm and comforting, but don't have much time.
1/2 lb ground meat
1/2 onion
2 cans Campbell's Minestrone Soup
1 can pinto or black beans, drained
In skillet cook ground meat with onions. While ground meat is cooking, in a large pot empty both cans of soup and the drained beans. Add one soup can full of water. Once it starts to boil reduce heat to simmer. When ground meat is done, drain grease and add to pot. Let this cook for about 15-20 minutes on low heat. Serve in soup bowls and garnish with cheese on top. Enjoy!
