Just Chillin 
It’s after Christmas relaxing and recouping time!  Made it through another holiday season.  And I’m not much of a partier on New Year’s Eve, so I’ll be at home chillin.  Maybe I’ll finish that quilt I’ve been working on for so long.  It’s not that it’s hard, just a motivation thing on my end.  Sometimes I have issues following through with crafts I start.  Am I the only one?  
 
I made a really yummy taco soup last night.  I was going to take a picture of it and blog about it, but I ate the whole bowl, then realized I never took the picture!  Oh well – all I can say is that it was really good!  I’m sure I will be making it again and next time I’ll try to have better self-control!
 
I did however make this corn dish that was good as a side for our Christmas dinner.  The Chipotle peppers and jalapeno gives it a nice kick of flavor.  Here is how I made it:
 
2 cans corn drained
1/2 medium onion, diced
1/2 - 1 jalapeno pepper, seeded and chopped finely
1/4 stick of butter
1/2 Philadephia Regular Chipotle cream cheese
 
In pan, saute onion in butter.  Add japepeno and let cook a few minutes.  Stir in cream cheese and corn.  Cook on low to heat throughout.  *You could also saute green peppers.
 
 
 We had Christmas at my sister's house.  Here is her dog Maggie patiently watching while everyone opened their presents.  If you look in the top left-hand corner, she got goodies too!

I hope you too will find time this holiday season to take it easy and enjoy being around family.  Cooking meals and eating together is a great way to bring family together.
