Christmas Parties and Goodies
This past week at work and at home has been mostly about food. Cute bags with gifts of homemade cookies, breads, candy… you name it!  It’s great to have such nice coworkers and friends.  Christmas time just makes me want to eat!  Eat and sing Christmas songs and watch the Hallmark channel!  Aside from the mushy Hallmark Christmas shows, Christmas time is mostly about celebrating Jesus’ birth, and giving and sharing with one another.  
For our ‘goodie day’ at work I made a Raspberry Cheeseball.  This recipe is so, so, so delicious!  It didn’t last long.  The red raspberry preserves make this cheeseball not only delightful in taste, but also very festive in color! 
The picture above doesn't do it justice.  I wish I could hand you a scoop on a cracker right now.  I know you would be loving it! 
Here is how the cheeseball looks before you pour the raspberry preserves over the top.  Check out all the cheese, pecans, green onions - yum!   
 

Raspberry Cheese Ball
 
1 cup mayonnaise
1 8 oz package extra sharp cheddar cheese grated
1 cup chopped pecans
1 bunch of green onions chopped
1 jar raspberry preserves
 
Mix all together (except preserves) and form into a ball.
Pour raspberry preserves on top and serve with crackers.
