Chicken and Dumplings 
Here is a twist on the classic chicken and dumplings.  My family really likes this recipe.  The tortillas take the place of the traditional dumplings and the green chilies add a wonderful spice.  Great for a cold winter day!
 
 
 
2-3 chicken breasts, cooked and shredded into chunks
3-4 cups chicken broth
3 tablespoons butter
1 medium onion
2 cloves garlic chopped
1 – 1 ½ teaspoons ground cumin
¼ cup flour
1 can diced green chilies, drained
½ cup ½ & ½ or light cream
4-5 flour tortillas cut into 1 “ strips (wheat tortillas are a healthier option)
Grated cheese
Salt and pepper to taste
 
Melt butter in large stock pot.  Add onions garlic and cumin and sauté until onions are tender.
Stir in flour, add chicken broth and cook until thicken.
Add green chilies, salt and pepper.
Add chicken and simmer.
Add tortillas to soup.
Cover the soup and turn off heat for 15 minutes.
Pour soup into bowl and add cheese on top.

It's been really cold here in San Angelo, TX.  I don't think it ever got out of the 20's today - which is unusual for our part of the country.  Normal temperature is in the 50's this time of year.  It makes me want to cook soups, chili, red beans and cornbread.... and all those other savory wintertime recipes! 
 
I've started another Christmas craft project and will be posting pictures later on.  It's been a really fun project to learn!  How did we ever make it before the Internet and YouTube videos to learn how to do these things?  Guess it was trial and error or we read lots of how-to books!
 
Got our Christmas tree up and Biscuit has already found a Christmas pillow to enjoy!  Silly dog!  It must be nice to sit back, relax, and just watch all the work get done!
