Chicken
and Dumplings
Here
is a twist on the classic chicken and dumplings. My family really likes this recipe. The tortillas take the place of the
traditional dumplings and the green chilies add a wonderful spice. Great for a cold winter day!
2-3
chicken breasts, cooked and shredded into chunks
3-4
cups chicken broth
3
tablespoons butter
1
medium onion
2
cloves garlic chopped
1
– 1 ½ teaspoons ground cumin
¼
cup flour
1
can diced green chilies, drained
½
cup ½ & ½ or light cream
4-5
flour tortillas cut into 1 “ strips (wheat tortillas are a healthier option)
Grated
cheese
Salt
and pepper to taste
Melt
butter in large stock pot. Add onions
garlic and cumin and sauté until onions are tender.
Stir
in flour, add chicken broth and cook until thicken.
Add
green chilies, salt and pepper.
Add
chicken and simmer.
Add
tortillas to soup.
Cover
the soup and turn off heat for 15 minutes.
Pour
soup into bowl and add cheese on top.
