Peach Cobbler
There’s a lot of good peach cobbler recipes out there, but this one is quick and easy to make for us busy folks!  And the taste is really good too! 
 
2 packages of frozen peaches, thawed
1/3 cup all purpose flour
½ teaspoon ground nutmeg
2 cups sugar
¾ cups butter
1 teaspoon vanilla extract
1 package refrigerated pie crust
3 Tablespoons sugar 
 
Preheat oven to 400.  In a pan, stir together peaches, flour, nutmeg and 2 cups sugar.  Bring to a boil over medium heat.  Reduce to a lower heat and simmer for 10 minutes.  Remove from heat and stir in vanilla and ½ cup butter.  Spoon mixture in the bottom of a 13 X 9 inch baking dish. 
 
Unroll the 2 pie crust.  (You may have to roll it out a little to form a rectangle.) Cut long strips the length of the baking dish.  Place long strips on top of cobbler.  Cut shorter strips and add to cobbler in the opposite direction.  (If you have a pastry wheel, use that to cut the strips to make really nice edges.)  
 
Spread remaining butter on top and sprinkle with sugar.  Bake in oven for approximately 20 – 30 minutes or until crust is golden brown.
