Chicken Soup with Barley
1 package
of chicken tenders or about 3 large chicken breasts
1 medium
onion chopped
4 carrots
sliced
2 ribs of
celery sliced
2 garlic
cloves, chopped finely
1 ½ - 2 32
oz boxes of chicken broth
1/2 cup
pearled barley
3 tablespoons
butter
½ teaspoon
thyme
½ teaspoon
ground comino
½ teaspoon
nutmeg
½ teaspoon
pepper
Salt to
taste
Cook
chicken and cut into cubes.
In a large
pot, melt butter and saute garlic, onions, carrots and celery.
Pour in
chicken broth and stir in all seasonings.
When the
soup starts to boil, turn down the heat and add the barley and chicken.
Simmer with
a lid for approximately 45 minutes to 1 hour, or until the Barley is tender.
Add salt
to taste.
