Pork Chops and Golden Mushroom Gravy

 

A quick and easy way to make pork chops and gravy – using Campbell’s Golden Mushroom Soup. Adds a tasty flavor to the pork chops and potatoes.
 
1 package of thin sliced boneless pork chops
½ onion – diced
½ green bell pepper – diced  (optional)
2-3 potatoes diced
1 can Campbell’s Golden Mushroom Soup 

Coat a large skillet with oil or spray with Pam Cooking Spray. 
Place pork chops in skillet
Add diced onions and green peppers
Sauté until pork chops are brown on both sides
Add potatoes and golden mushroom soup
Fill up the empty can of soup with water.  Add some water to the skillet so the soup isn’t so thick.
Add water throughout cooking as needed to make the right consistency of gravy. 
Cook with a lid until potatoes are tender and pork chops are cooked throughout. 
 
 

Happy Monday! I hope you're having a great Monday.  A lady I worked with when I was newly married, gave me the recipe above. I think I was complaining because I didn't really know how to cook, or have any good recipes. She must have felt sorry for me (or maybe for my husband) so she gave me a few fool-proof recipes. This one is truly quick and easy and is delicious. 

Well, it's my last day off work, after being off for a whole week.  And it was a great week at that.  Lots of fun times with family.  It's so nice to set your own pace and do the things you enjoy the most.  Life is good and I feel blessed!  And as you can tell, Biscuit is trying to recoup from his busy week as well.  I don't think he's had that much excitement in quite awhile.  At one time we had three dogs running around our house.  So he's been sleeping most of the day, basically getting back to his routine!
