Mandarin Orange Cake

Saturdays is a good day to cook -- for me anyways.  It's about the only day I might have some spare time.   This cake has a wonderful icing with Cool Whip, Vanilla Pudding, and Pineapples.  And you can mix it all up in no time!  Give it a try.  I think you will enjoy it!

1 box Butter Cake Mix
1/2 cup vegetable oil
4 eggs
11 oz can Mandarin Oranges and juice
Mix well – beat for 3 minutes.  Bake in oven for 30-35 minutes or until a toothpick is inserted and comes out clean.

Icing:
8 oz. Cool Whip
16 oz. crushed pineapple and juice
1 large box Instant Vanilla Pudding
Mix well and spread on cake with spatula.

Guess I'm not the only one thinking of food.  I caught this bird out early this morning looking around and searching the grounds.  I'm sure a nice insect would do well for him today!  I hope he found whatever he was craving on his taste palate too!
